Wood Ear in Vietnamese Cuisine

Wood Ear (Mộc Nhĩ). A 3-4 centimeter diameter fungus in the form of an ear, thin, elastic, and a little gelatinous growing on decayed trunks. Wood ears are used in various dishes, including spring rolls (nem) and steamed rice pancakes (bánh cuốn).
